You may have to buy a different model or try experimenting yourself.

Yes you probably could. The battery will be much larger then the unit and may have to extend the short thermistor cable.

Q: Is the Sensor cable also waterproof, or is just the tip of the sensor itself waterproofed?

Just the sensor, the rest of the components are exposed and can easily get damaged in water. But its small you maybe able to make a separate case for it to make it water proof.
