Q: Are the holes small enough to keep grape seeds in the sieve and not slip through the holes into the sauce?

I think they are. I used it with blackberries and didn't have any seeds come through.

Q: Would this work for preparing fruit to make fruit leather?

I haven't used it for that but you should be able to. It will hold onto the majority of pulp, however. Not sure if that's whats needed for fruit leather.

Q: What size volume? 1 quart? 2 quart?

Since the strainer is 7" across and approx. 8" deep, the calculator I found on the internet show the volume to be approx. 102.63 cubic inches, which translates to approx. 56.87 ounces
